A graduate of the renowned Johnson and Wales University, Jim Bailey now hails as the Culinary Director at Borrego Ranch Resort & Spa.
Bailey's extensive knowledge of wines, organic foods and vegetarian cuisine has influenced the resort's dedication to support local and regional farmers, fisherman and producers. As such, the dining experience at Borrego Ranch captures the simple and pure tastes found in dishes made with the finest seasonal and organic ingredients, and a wine list highlighting expert selections from California's wine country.
Bailey's career spans two decades in the food industry and includes a range of experiences from bartending and catering to food and menu creation as an Executive Chef. At Borrego Ranch, Bailey's daring exploration and passion for food is reflected in a variety of culinary offerings as unique as the destination itself. Guests can enjoy an al fresco dining patio, enveloped in stunning rose gardens, a lounge, a cantina, a poolside café, or a main dining room that's casual in tone yet exquisite in food, wine and service.
